"Everyday" lamb recipes for real life

 

Lamb Meatloaf

Ingredients

1  1/2 pounds lean ground grass-fed lamb

1 cup tomato sauce

3/4 cup oats - old fashioned or quick

1 egg (can substitute 2 egg whites) beat lightly

1/4 cup chopped onion (more if you like onion)

1/2 teaspoon salt (or not)

1/4 teaspoon pepper (1/2 teaspoon if you love pepper)

1 or 2  garlic cloves, crushed (use more/less to taste)

Personalize by adding -

1/2 cup can corn   or   1/2 cup chopped red/green bell pepper  or 1/4 cup chopped jalapeņo peppers, etc.  Mushrooms, Parmesan cheese or chopped cilantro/parsley can be added for variation. You can top the loaf with cheese or tomato sauce after it is done. Return it to oven for a few minutes to melt/warm it.

Mix ingredients well in a large bowl and then cook in a 8 x 4 loaf pan @ 350 degrees for an hour or until done in center. Let stand 5 minutes for easier slicing and drain off juices before slicing.  Makes about 8 servings.
